Boston Butt Lunch This is one of those Christmas's, only 2 of us at home now, so we borrowed our daughters best friend and her sister. There always in for a smoke up and some good food, with a 1.9kg Boston Butt of pork and put it in the bush pig (Pellet Smoker) it was a great feed with no lack of food

Tonight I had to teach a nephew how to use a $50 Weber, cooked 2kg pork rack and 1.7kg boned lamb shoulder Got some charcoal from woollies and of we go. By the time I went to take a photo of the food most of it was gone.

You see this much mayonnaise you know there has to be Meat getting smoked some were in the area, With a 5kg brisket and a 4.2kg of deboned lamb ready to cook, this should be a good night for the party. Some awesome meats with a couple of nice salads - A great way to spend a night with some beers and friends.

Over the last couple days we have had a customer stay to do some lessons with his new pellet smoker, We did 2 cooks over 2 days - 1st day was chicken wings due to time restraint, 2nd day we did Brisket and Pork Ribs. Christmas day i got asked to cook down at Albion Park for a heap of friends, was another good chance to bang on the new all purpose cooker smoker with 10kg brisket and deboned 6kg front pork shoulder from Wagga Meat Supply and topped that up with 4 kg of Chicken Wings. Looking at a 12 plus hour cook i was very happy with heat retention of the new cooker when using the charcoal. Will be back down in new year for some more cooking lessons to teach the new owners some different styles of cooking you can achieve with this style of smoker
